Stuffed peppers are yummy – but unstuffed pepper casserole is even better! Who has time to blanch peppers and bake them for an hour? Here’s a quick and easy recipe for a casserole that tastes like stuffed peppers. This recipe is sure to become a family favorite! My partner doesn’t care that much for stuffed peppers, but he sure likes the casserole. The night after making it I came home from work looking forward to having leftovers, but he had polished it off for breakfast.
Ingredients
1 pound ground beef
2-3 green bell peppers
14 oz can tomato sauce
1 cup instant rice
1/2 cup shredded cheddar cheese (divided)
2 tablespoons chopped onion
1 tablespoon Worcestershire sauce
2/3 tablespoon salt
1/4 tablespoon black pepper
Directions
- Preheat oven to 350 degrees F
- Brown ground beef in large skillet
- Add peppers and onions to ground beef and saute until soft (4-5 minutes)
- Drain grease from skillet
- Mix in tomato sauce, instant rice, 1/4 cup cheddar cheese, Worcestershire sauce, salt, and pepper
- Transfer mixture to 7″ x 11″ glass baking dish (or similar) and bake covered for 30 minutes
- Remove cover, add remaining 1/4 cup cheddar cheese, and bake an additional 5 minutes, or until cheese is melted
- Remove from oven and let stand 5 minutes before serving
This hearty meal will stand on its own or add a side salad.
